Cranberry Orange Coffee Cake

This orange cranberry coffee cake is just a nice treat in the middle of winter. In these cold and gloomy days, preparing this coffee cake is the best way to heat and enjoy winter flavors. This coffee cake is old and delicious, which I wanted to re-update to update the blog image.

I originally made this recipe in January 2013, when I started to create a blog, and it was then delicious and more so with the bold taste of cranberries and oranges in a sweet coffee cake.

Cranberry Orange Coffee Cake

One of the favorite things about bread with fresh citrus is the wonderful smell that fills your kitchen and your home. This cake uses fresh orange juice and a variety of orange flavor. Do not remove these two things, they emphasize the taste of cranberries and make the coffee cake more delicious.

INGREDIENTS
FOR THE CAKE:

  •  2 cups all-purpose flour
  •  1 cup granulated sugar
  •  1 ½ teaspoons baking powder
  •  ½ teaspoon baking soda
  •  ½ teaspoon salt
  •  ¼ cup unsalted butter, at room temperature
  •  1 egg, beaten
  •  ¾ cup fresh squeezed orange juice
  •  1 tablespoon orange zest
  •  2 teaspoons pure vanilla extract
  •  1 cup coarsely chopped fresh cranberries
  •  ½ cup coarsely chopped pecans
  • FOR THE TOPPING:
  •  2 tablespoons unsalted butter, cold
  •  ¼ cup all-purpose flour
  •  1½ tablespoons granulated sugar
  •  ¼ teaspoon ground cinnamon
  •  A pinch of salt
  •  ¼ cup coarsely chopped pecans
  •  1 cup powdered sugar
  •  1-2 tablespoon milk
