Sweet Potato Salmon Croquettes

In my family, we tend to don’t build fancy appetizers for Thanksgiving. whereas delicious, our entire Thanksgiving meal isn’t very “gourmet.” we tend to stick with the fundamentals — saute veggies, roast sweet potatoes, turkey, and after all, mashed potatoes.

  • 1 1/2 pounds salmon fillets
  • 1/3 cup parsley chopped
  • 2 tablespoon fresh dill chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon onion finely minced
  • 1-2 tablespoons jalapeno finely minced, depending on heat
  • 3/4 teaspoons sea salt
  • 1 egg
  • 1 1/2 cups gluten free breadcrumbs
