GREEK YOGURT POUND CAKE WITH BLUEBERRY-CHIA SAUCE

"Blueberries" are 13 or so bushes of berries that still grow and grow berries at home where my grandparents lived until they died more than a decade ago.

I live about five hours of Blue Berry, so I expect my father sometimes travels to his old house and gives me a report. A few years we can not choose.

But this year I have every chance to get to Alabama and force two young boys to pick the blueberries. I mean, when you need to cook all these recipes, you have to choose.

I developed this pie with yogurt and yogurt sauce last summer and quickly became my favorite dessert for my youngest son this season.

Easy to make, but the guests are impressive. It does not matter if you choose your berry or hit a basket at your grocery store, making you quickly become a favorite in your home.

Ingredients

  • 2 cups fresh blueberries
  • 1/2 cup orange juice
  • 2 tablespoons chia seeds (do not omit as this is what thickens the sauce)
  • 1 to 2 tablespoons honey (adjust depending on sweetness of blueberries)
  • 1/4 teaspoon vanilla (optional)
  • 1 1/2 cups (180 g) all purpose flour
  • 3/4 cup (90 g) white whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup softened butter
  • 1/4 cup canola oil
  • 1 1/2 cups sugar
  • 3 large eggs
  • Zest of 1 lemon
  • 1 cup plain nonfat Greek yogurt
