HOT MILK SPONGE CAKE

This sweet, sweet mix, mixed with a spongy sponge cake and a thick butter cake, is rich with the addition of ghee and whole milk.
Instead of being blown away, I was relieved to find that my cake mix was ideally combined with some quick strokes.
The original recipe for this simple and delicious cupcake is from Tisha Boyle Kick's book, which rightly states that "there is something magical about making a cake from scratch, a process that transforms some simple ingredients - butter, sugar, flour and eggs - into cooking.

1 1/3 cups cake flour
1 1/4 tsp baking powder
1/4 tsp table salt
1/2 cup whole milk
4 tbs unsalted butter
3 eggs, room temperature
3/4 cup granulated sugar
