Chipotle Taco Breakfast Skillet Bake {Paleo & Whole30}

Another savory breakfast coming back at-cha at lightening speed. It’s fast and delicious, packed with nutrients, and a legit excuse to eat taco meat for breakfast. Throw a cocktail in there too – nobody can guess if you’re activity it during a travel mug, right?
Just kidding – I don’t support drinking margaritas within the morning as a result of they don’t contain any caffein. However, I do support eggs baked into jalapeno pepper chili seasoned taco meat with veggies, avocado slices, additional jalapeno pepper condiment, and PLANTAINS! Followed by low, as a result of let’s face it, Paleo or not we tend to still want our low.
Just one additional reason to hug my low very, very tight right away is that winter has finally arrived. a bit little bit of snow, blustery winds and I’m thinking there can be many mornings within the close to future wherever the sole outside running I’ll do is thru the athletic facility car parking zone. simply in time to formally begin marathon coaching, of course. And additionally simply in time for the Fred Lebow 0.5 Marathon this weekend – that isn’t trying thus sensible at now the least bit (even although I’m not alleged to look!)

Ingredients
- 1/4 cup chopped onions
- 1 tbsp coconut oil or ghee for cooking
- 1/3 lb grass fed ground beef
- 1/8 tsp chipotle chile pepper
- 1/8 tsp Mexican chili powder
- 1/8 tsp cumin
- 1/8-1/4 tsp sea salt to taste
- Large handful fresh spinach chopped
- Small handful cherry tomatoes quartered
- 2 eggs
- Sea salt to season eggs
- Half an avocado sliced, for garnish
- Chipotle salsa for topping or your favorite salsa
